The Regional Styles of Zhejiang Cuisine

Zhe cuisine includes the cooking traditions of Hangzhou, Shaoxing, Wenzhou and Ningbo. Zhejiang’s official dining guide describes Hangzhou dishes as fresh and light, Shaoxing food as fragrant and often more assertively seasoned, and Ningbo cooking as strongly connected to seafood. These distinctions are more informative than describing the whole province with one flavor.

Freshness, Texture and Zhejiang Cooking Methods

Careful ingredient selection, detailed preparation and tender textures connect the different styles. The official guide lists quick frying, stir-frying, deep-frying, simmering and steaming. Its Hangzhou examples include Dongpo pork, West Lake vinegar fish, Beggar’s Chicken and Sister Song’s fish soup. Their different sauces and techniques show the breadth of Zhejiang food.

Why Local Zhejiang Food Is Not Always Mild

An official report on county-level food traditions notes spicy food in Quzhou, steamed buns and fried rice cakes in Shengzhou, and beef noodles in Fenghua. These examples qualify the broad reputation for delicate flavors. When exploring Zhejiang recipes, identify the locality and the actual method rather than assuming that every dish is lightly seasoned.
