What Defines Hunan Cuisine?

Hunan cuisine, also known as Xiang cuisine, is one of China’s eight major culinary traditions. The provincial government describes hot and sour flavors, fresh aromas, strong colors and a varied repertoire. A guide to Hunan food should therefore cover preserved and steamed dishes as well as the familiar chili-heavy stir-fries.

Chilies and the Hunan Seasoning Pantry

A separate provincial introduction names regional vinegar, soy sauce, chili sauce, Liuyang fermented soybeans, garlic and ginger. These ingredients help explain the layered seasoning behind the heat. The same introduction describes Hunan cooking as open to a range of influences, so a single spicy flavor profile does not define every dish.

Hunan Dishes and Local Variation

The government’s examples include pork stir-fried with chilies, steamed fish head with chopped chili, Changsha stinky tofu, braised pork and cured foods from western Hunan. Zhangjiajie and Fenghuang offer their own dishes, including mushroom chicken stews and sour-soup fish. They illustrate local variation rather than a fixed menu for the whole province.
